Irish Beef Stew
1) In large pot, combine 1 tbsp oil, 1/2 large chopped onion, 1/2 -1 lbs cubed
beef. Cook until beef is browned.
2) Add 1/2 C chopped carrot, 1 C chopped parsnip, 2 cubed potatoes, package
contents, and 4 1/2 C water. Bring to a boil and simmer covered for 90 mins,
adding water if needed.
Option: Add ½ C stout beer, stir and simmer for 15 mins with no lid.
1/2-1 lbs cubed beef
1/2 cup chopped carrot
1 cup chopped parsnip
2 cubed potatoes
Option: 1/2 cup stout beer
Country Chicken Chowder
1) In large pot, heat ¼ C butter; brown ½ -1 lbs diced chicken with ½ diced onion.
2) Add ½ C celery, ½ C carrot, 2 cubed potatoes, 3 C water; boil, then simmer, covered, for 20
min.
3) Add package contents and 2 C cream or milk; simmer for 20-30 min more (until potatoes are
soft and rice is cooked), stirring regularly. Add extra water or milk as needed.
Season with salt and pepper.

1/2 cup carrot
2 cubed potatoes
2 cups cream or milk
Fully Loaded Potato Soup
168g - SERVINGS: 4-6 x 2 CUPS
Directions:
1) In large pot, sauté 1/2 onion in ¼ C butter.
2) Add 4 C water, 2 medium cubed potatoes; boil, then simmer covered for 20 min, stirring
regularly.
3) Add package contents, 1 ½-2 C cream or milk, 1/4 C butter, 1/2 package cooked chopped
bacon; simmer on low for 20-30 min, stirring regularly (watch it does not stick to pot). Add extra
milk as needed. Season with salt and pepper.
Garnish with sour cream and cheese
