Thai Coconut Prawn Soup

 196g SERVINGS: 6-7 x 2 CUPS

Directions:
1) In large pot, heat 3 tbsp butter; sauté 1/2 large chopped onion, 2 cup bok
choy, 3/4 cup diced bell pepper, 1 cup diced mushroom.
2) Add package contents, 4 cup water, 400 ml can coconut milk, 1 cup plain
yogurt, juice of 1/2 lime, 2 tbsp brown sugar, boil then simmer covered for
approx 70 min.
3) Add 2-3 cup shrimp or prawns, 2 TBS soy sauce, 1 tbsp peanut butter;
simmer until prawns are cooked. Season with salt and pepper. Garnish with
sesame oil and cilantro.
Option: substitute cooked chicken or steak for seafood.

Shopping List:

1/2 a large onion, chopped
2 cups Bok choy
3/4 cups diced bell pepper
1 cup diced mushrooms
400ml can of coconut milk
1 cup plain yogurt
juice of 1/2 a lime
2tbsp brown sugar
2- 3 cups shrimp or prawns
2 tbsp soy sauce
1 tbsp peanut butter
Garnish with sesame oil and cilantro

Option: Sub cooked chicken or steak for seafood


Mulligatawny Soup

 244g SERVINGS: 5-6 x 2 CUPS

Directions:
1) In large pot, saute 1/2 - 1 lbs cubed chicken, 1/2 chopped onion, 1 chopped carrot,
1 chopped celery stalk.
2) Add package contents, 5 - 6 C water, boil, then simmer covered on low for 1 ½ hr.
3) 20 min before serving, add 1 C chopped tart apple. Season with salt and pepper.
Options: thicken with coconut milk; substitute shrimp for chicken.

Shopping List:

1.5-1 lbs cubed chicken
1/2 an onion, chopped
1 chopped carrot
1 chopped celery stalk
1 cup chopped tart apple

Options: thicken with coconut milk; sub shrimp for chicken


Mexican Tortilla

 229g - SERVINGS: 5-6 x 2 CUPS

Directions:
1) In large pot, brown 1/2-1 lb hamburger or chicken and 1/2 onion, chopped.
2) Add 4 1/2 C water and bean portion of soup mix (pinch bag below chickpeas).
3) Boil, then simmer, covered, for 1 hr.
4) Add remaining package contents and 398 ml can diced tomatoes; cook, covered, for 1-2 hr.
Season with salt and pepper.
Garnish with sour cream, tortilla chips, and grated cheese
