Canadian Chef Anna Olson's Classic Butternut Squash Soup Recipe

Ingredients:

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 4 cups vegetable or chicken broth
  • 1/2 cup apple cider
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • Salt and freshly ground black pepper to taste
  • 1/2 cup heavy cream (optional, for creamier texture)
  • Fresh parsley or chives for garnish (optional)

Instructions:

  1. Sauté Aromatics: Heat olive oil over medium heat in a large pot. Add chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cook for another minute.

  2. Cook Squash: Add cubed butternut squash and stir. Cook for about 5 minutes.

  3. Add Liquids and Seasonings: Pour in vegetable or chicken broth and apple cider. Stir in nutmeg, cinnamon, salt, and pepper. Bring to a boil, then reduce heat and simmer until squash is tender, about 20 minutes.

  4. Blend Soup: Use an immersion blender to puree the soup directly in the pot until smooth, or transfer in batches to a blender. Be cautious of hot liquid.

  5. Finish and Serve: Stir in heavy cream if desired for a creamier texture. Adjust seasoning as needed. Serve hot, garnished with fresh parsley or chives if desired.

Freezing Instructions:

  • Cool First: Allow the soup to cool to room temperature before freezing.
  • Portion and Freeze: Use your flexible, non-stick tray to portion the soup into one-cup servings for convenience.
