Classic Niçoise Salad Recipe

Ingredients (Serves 4):

  • 4 small potatoes (Yukon gold or red), boiled and halved

  • 100g green beans, trimmed and blanched

  • 2 hard-boiled eggs, halved

  • 1 cup cherry tomatoes, halved

  • ½ red onion, thinly sliced

  • 1 cup mixed olives (Niçoise or Kalamata work well)

  • 1 can (120g) tuna in olive oil, drained (or use grilled salmon for variation)

  • Fresh greens (butter lettuce or arugula)

  • Handful of Spicy Caesar Walnuts (for crunch and kick)

Optional Additions: Capers, anchovy fillets, cucumber slices, or roasted red peppers.


Dressing:

  • 3 tbsp extra virgin olive oil

  • 1 tbsp red wine vinegar

  • 1 tsp Dijon mustard

  • Salt and pepper, to taste

  • ½ tsp minced garlic

  • Optional: squeeze of lemon juice for brightness

Directions:

  1. In a large bowl or platter, layer greens as the base.

  2. Arrange potatoes, green beans, tomatoes, onion, olives, and tuna in grouped sections on top.

  3. Drizzle with dressing.

  4. Top with halved eggs and a handful of Spicy Caesar Walnuts for a flavour-packed crunch.
